No-bake Chocolate Peanut Butter Cookies

These cookies are a staple at my house. When I was younger, I used to make a pan of these for a snack and eat the whole pan myself. Yum! I love classic recipes like this and want to share them with you. I also came up with another scrumptious way you can serve these. Instead of serving them in "cookie style", I take them right off the stove and instead of shaping them into cookies I serve the mixture HOT over vanilla ice cream. It is seriously sooo good!


No-Bake Chocolate Peanut Butter Cookies

Yields: 40 small cookies or 24 large cookies

1/2 cup unsweetened cocoa powder
1 1/2 cups sugar
1/2 cup butter
1/2 cup milk
1/2 cup creamy or chunky peanut butter (I use chunky, it adds some crunch)
1 tsp. vanilla
3 cups rolled or old fashioned oats
In a saucepan over medium heat, combine cocoa, sugar, butter and milk. Bring to a rolling boil and cook for 2 minutes, stirring constantly. Remove from the heat and add peanut butter and vanilla, stirring until creamy. Then stir in the oats until well combined.
Drop by spoonfuls onto a cookie sheet lined with wax paper or serve hot over vanilla ice cream.
