Rainbow Cupcakes

First off, I need to tell you what a big thing rainbows are in our family. Meg and Brit absolutely LOVE rainbows! Anything is better if it's rainbow! Meg made these a few years ago for one of her son's birthday's. They were a hit. The adults almost liked them more than the kids.
Rainbow Cupcakes
From: Kells
Makes: 24-30 Cupcakes
Time: 1 hour

1 Vanilla Cake Mix
Food Coloring- I used Neon food coloring
1 1/4 C. Water
1/3 C. Oil
3 Egg Whites
White cupcake papers

To mix the batter- follow directions on the back of the cake box. Then spearate evenly into 4-5 different bowls. Drop a few drops of food coloring in the bowl and mix. Add more to get the desired color.
1-Place the baking papers in the cup cake pan.
2-Start with your first color and drop a spoonful into the papers.
3-Do the same with the second color. When you are done with the second color, get your finger wet and smooth the second color over the first. You want the second color to go all the way to the sides. Getting your finger wet makes it so the batter doesn't stick to your finger and mix with the first color.
4-Continue with this step until your done adding colors.
5-Bake according to cake mix directions.
