The Best Taco Soup

I am sure most of you have had taco soup at some point in your life and probably most of you have a recipe.  They all pretty much have the same basic ingredients, but this one I am happy to say is the best I have tried.  So get out your slow cookers and can openers and make a batch for dinner tonight, isn't the weather perfect for it?

The Best Taco Soup

Yields: 8-10 servings
Time: 20 minutes hands on and 4-6 hours in the slow cooker

1 pound lean ground beef
1 small onion, chopped
1 packet taco seasoning
1 (28 oz) jar spaghetti sauce (plain; not garlic, four cheese, mushroom, etc)
16 oz salsa
1 (4 oz) can chopped chillies
1 (15 oz) can corn
2 (15 oz) can beans (kidney, chili, or black, or a mixture)
1 (15 oz) can tomato sauce 
1 small can olives (optional)

Brown you beef along with the onion in a medium skillet over medium-high heat.  Once the beef is cooked through and the onion is translucent add the taco seasoning and the water according to packet directions.  Mix well.

Add beef and all other ingredients into your slow cooker and mix well.  Cook on low for about 4 hours, but you can leave it in there for up to 6 or 7.

Serve with sour cream, cheddar cheese and tortilla chips.  Enjoy!

  2. I know, I miss something everyday too. I wish I had the time to do it myself, but I don't. Their lives just got too busy. I am still hoping they come back someday!
