Mexican Chicken

If I had to name my #1 comfort food dish, this would absolutely be it!  If you like spicy dishes, then you will love this.  For all you spicy sensitive types, you can also tone it down by not incorporating as many jalapenos.


Here are the ingredients that you will need:


Mexican Chicken

Serves 6-8
Prep Time: 30 Minutes
Cook Time: 35-45 Minutes

1 can Cream of Chicken Soup
1/2 can Chicken Broth
1 can (8oz.) Tomato Sauce
1 1/2 Cups Salsa
1/2 Cup chopped onion
1/4- 1/3 Cup chopped jalapenos
3 Cups cooked shredded chicken
1 Cup Sour Cream
1 Cup Shredded Cheddar Cheese

1.  In a medium sauce pan, mix together cream of chicken soup, chicken broth, tomato sauce, salsa, onion and jalapenos.  Over medium heat bring to a boil.

2.  Remove from heat, add shredded chicken, sour cream and cheddar cheese.

3.  Put into baking dish and cover, bake at 350 degrees for 35-45 minutes.

4.  Serve with tortilla chips.
