Twice Baked Potatos

I know every one has a Twice Baked Potato recipe. But, mine is the best. You'll just have to try them to see what I am talking about!
Twice Baked Potatos

Cook Time: 1 Hour 15 Minutes

4 Medium Size Potatos
1/2 C. Butter
3/4 C. Sour Cream
1/2 C. Cheddar Cheese
4 Strips of Bacon, Cooked and Crumbled
3 Green Onions, sliced
Salt & Pepper to Taste
Scrub potatoes, pat dry and poke holes all over with a fork. Put about 1 tablespoon butter in your hands and rub all over the potato. Sprinkle potato with salt. Bake at 400 for 45 minutes to an hour, until soft. Mix butter, sour cream, cheese, bacon, green onions and salt and pepper. Then potatoes have cooled enough to handle, cut in half. Spoon out the middle and mix it with the sour cream mixture. Spoon the mixture back into the potato skins. Bake at 400 for 15 minutes or until heated through.
* You can save some bacon, cheese, and chives to place on top of the potato when it's done cooking.

  2. We had these tonight. Delish! I didn't have enough sour cream, so I added a bit of ranch to make up for it, I just might have to make them tomorrow too!
