Black Bean Taquitos and Tomatillo Dressing

These taquitos are delicious and good for you, you can’t beat that!  The dressing isn’t as good for you, but that’s okay you are making up for it by eating the healthy taquitos.  I calculated that each taquito is about 230 calories, 3 grams of fiber, and only 2 grams of fat (that is 4 weight watchers points, if my memory is correct!)  These are packed with so many things that are good for you, I thought my kids would turn their noses, but I was pleasantly surprised that all three of them ate it right up and one even asked for more.  These are definitely going into the rotation of family favorites!



Black Bean Taquitos

Yields: 11 taquitos
Time: 40 minutes

1 (14oz) can black beans, drained and rinsed
2 T bottled salsa
½ t Cumin
½ t kosher salt
¼ t black pepper
½ t chipotle chili seasoning
2 T fresh lime juice
1 (10 oz) box frozen spinach, thawed, drained and roughly chopped**
1 C Frozen corn kernels
1 C shredded cheese (Monterey Jack or cheddar)
10-12 Tortillas

Preheat oven to 425. Place ¾ cup of the beans in a food processor with the salsa, garlic, cumin, salt, pepper, chipotle chili, and lime juice. Process until mostly smooth.  Transfer mixture into a medium bowl and add remaining ingredients, including the beans. Mix together.


Place about ¼ cup of the bean mixture on each tortilla. Roll up the tortilla and spray with cooking spray.  Bake for 20-25 minutes or until edges are golden brown and crisp.  Dip in Tomatillo dressing, recipe below.

** Tip for draining thawed spinach. Wrap spinach in a kitchen towel and ring over the sink. It will look like this:

Tomatillo Dressing (just like Café Rio)

Time: 10 minutes to make 2 hours to chill
Yields: 10 servings (freezes well)

8 oz green salsa
1 1/2 Tbsp Ranch Dressing mix
1/4 C sour cream
1/4 C mayo
1/2 C cilantro leaves
1/2 tsp garlic
1/8 tsp cayenne
1/4 tsp salt
2 tsp lime juice
1/4 tsp cumin
1/4 C sugar

Add all ingredients to a blender and blend together.  Chill for at least 2 hours.
