Spicy Lime Chicken

This zippy chicken dish is delicious to the taste buds and even better for the waistline.   My husband and I are trying to shed a few pounds before we go on a cruise and this recipe is perfect for the diet.  Just add some veggies or a salad and your good to go.  Kids love it too!


Spicy Lime Chicken

Serves: 6
Time: 3 minutes prep time, 15 minutes cook time

1 1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1/4 tsp paprika
1/2 tsp garlic powder
1/4 tsp onion powder
1/2 tsp dried thyme
1/2 tsp dried parsley
6 boneless, skinless chicken breast halves
or 12-14 boneless, skinless chicken tenders
3 Tablespoons Olive Oil
2 Limes

1.  In a small bowl, mix together salt, pepper, cayenne, paprika, garlic powder, onion powder, thyme and parsley.  Sprinkle generously on both sides of chicken breasts.
2.  Heat olive oil in a large heavy skillet over medium heat.  Saute chicken until golden brown, about 4 to 5 minutes on each side.


3.  Sprinkle chicken with juice from 2 limes and continue cooking for about 4-5 minutes, coating the chicken evenly with the lime juice.
