Baked Veggies

Who says kids won't eat their vegetables!?  This dish is a perfect side to any type of meat.  At our house we like to have it when we BBQ chicken or steak.  Its loaded with vegetables and so yummy!

Baked Veggies

Prep Time: 15 minutes
Bake Time: 50 minutes

4 Red Potatoes (washed and cut into bite size pieces)
10-15 Baby Carrots
2 Cups Frozen Broccoli
1 Zucchini (washed and cut into bite size pieces)
1 Yellow Squash (washed and cut into bite size pieces)
1/2 Cup chopped onion
Container of fresh Mushrooms
1/4 Cup Olive Oil
1/4 Cup Butter
1 Package dried onion soup mix

Mix together melted butter, olive oil, and dried onion soup mix.  Put potatoes in 9x13 greased baking dish and pour half of the butter mixture on top and mix.  Cook at 400 degrees for 20 minutes.  Then add all veggies to the potatoes and pour remaining butter mixture over all the veggies and stir.  Continue cooking at 400 degrees for 30 minutes.
These are very good plain or with a little bit of sour cream on top. Enjoy!

  1. My husband does not like vegetables and he LOVED this dish. I added some minced garlic for more flavor. This will definitely be added to the rotation!
